Region: Situated in the north of Burgundy near the town of Auxerre in the Yonne department.
Grape Variety: 100% Chardonnay.
The grapes are gently crushed and settled to achieve clarity before fermentation. Alcoholic fermentation takes place at controlled temperatures between 20°C and 24°C (68°F–75°F), followed by malolactic conversion. The wine is then aged on fine lees in vats with controlled oxygen exposure to enhance texture and complexity.
Tasting Notes
Pale brilliant yellow in colour with a subtle green hue. The nose is expressive and fresh, showing bright citrus aromas of Meyer lemon and lime, layered with green pineapple, green apple, and quince, lifted by a distinctive petrichor (wet stone) minerality. On the palate, it is fresh, light, and vibrant, with steely acidity providing structure and length. The finish is crisp, clean, and flinty.
