Signatory Allt a'Bhainne 2000 Sherry Cask Finish 21YO 700ml

Allt A Bhainne is an obscure malt, it is mostly used for a handful of key blends but Signatory has managed to get their hands on a few unique casks. Blending two hogsheads all distilled in 2000 together and finishing them in a single sherry butt for 12 months.

On the nose, we get boozy fruits of soaked raisins, cherries, sultanas and wafts of cacao balance sweet, biscuity malt. Dark fruit jam and cherry chocolate alongside tangy notes of orange peel with a slow build of warming baking spice develop on the palate. Finally, rich, creamy barley and bold dried fruits. A touch of peppery oak rests beside sweet, aromatic spice with earthy hints of roasted coffee beneath.
