Daftmill 'New Zealand Exclusive' Cask 055/2011 60.2% 700ml
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.
This first-fill ex-Bourbon Barrel from Clermont Springs was specially selected for New Zealand. It was distilled in our summer season being filled on the 2nd August 2011 and has been bottled in Jan 2024 exclusively for New Zealand.
Tasting Notes
Nose: rich and expressive, with many yellow and green fruits, fresh gassy notes, olive oil, lemon barley water and subtle waxiness. Simple, direct but full of character. Water brings out flower honey, fruity muesli and crystalised fruits
Palate: on the sweeter and richer side, in keeping with the nose, only here with greater concentration. Many cooking oils, citrus marmalades, fruit salad juices that verge on the tropical with hints of pineapple and papaya. Then peppery and waxy warmth, fruit teas and the subtle funk of cider apple. Water brings out the core fruitiness while also seemingly thickening the texture – making it almost gloopy in the mouth.
Finish: long, surprisingly spicy, with pineapple, juniper, sweetened olive oil and lemon balm.
