Cave Privée is a selection of premium vintages, the wines have been kept over decades in the Veuve Clicquot's cellars. 54% Pinot noir, of which 15% vinified in red, 28% Chardonnay and 3% Meunier, with a dégorgement in 2008 and dosed 4 g/l.
TASTING NOTES
Beautiful peach, salmon-pink colour and quite deep. Wonderful glimpse - though fleeting - of strawberry jam before more oxidised, caramel and buttery, even mocha notes. The palate has lots of lemony acidity making it immediately focused, quite lean and food-friendly. The freshness of the red fruit adds to this lightness of touch, with a delightfully long finish too, a touch of orange peel.
