The fourteenth generation's unique sake brewing technique "Seven Chui Twenty Guan" is a collection of traditional Japanese quantifiers and extraction methods, "Chui" means that the brewed sake mash is placed in a cloth bag, and the wine is slowly dripped and collected by hanging the bag, also known as "drop wine", while the sake lees are left in the bag.

"Guan" refers to the unit of weight, each guan is 3.75 kg, and "20 guan" represents 75 kg. Legend has it that if sake is made in the way of "seven hanging twenty guan", the brewery may go bankrupt because it takes a lot of time and cost to extract a small amount of sake lees.

Takagi Sake Brewery breaks this myth and uses 7 vertical 20 kan as a symbol of high extraction technology and top-notch wine.

The wine is thick and full, with a silk-like texture, and the aroma of ripe melons such as cantaloupe and white peach wafts out when the bottle is opened, with a sweet and soft taste, accompanied by an elegant and delicate rice aroma, suitable for drinking alone to taste the rich layers.
