Juyondai Bankoh Junmai Daiginjo 1.5L 十四代萬虹純米大吟釀
Juyondai Sake Bankoh is a premium, limited-availability sake produced by Takagi Shuzo brewery in Japan, known for its rich, fruity flavor profile and lasting finish. It is a junmai daiginjo grade sake, meaning it is made without added distilled alcohol and is highly polished, typically with a polishing ratio of 35% and then matured/aged for approximately 2 years at –6 °C (ice-cold storage) to develop depth and mellow character.
This cold ageing helps the sake gain complexity, smoother texture, and deeper flavour layering while preserving aromatic qualities.
Tasting Notes
Aromas: red apple, fruit pie, sometimes white peach, honey, and floral tones
Texture: rich, dense, umami-laden, yet smooth and elegant
Finish: lingering, graceful, aromatically persistent
Food Paring
Because of its richness and aromatic complexity, “Bankoh” works particularly well with flavorful Japanese cuisine, especially richer seafood, sashimi, tempura, grilled fish, or dishes with a bit more seasoning or umami. Serve chilled (ideally quite cold) to emphasize freshness and aromatic clarity, but allow it to warm slightly in the glass to bring out secondary notes from the ageing.
