When sake is squeezed, it is divided into three parts from the beginning to the end of squeezing: arabashiri (first), middle drawing (middle), and blame (last). Nakadori is another name for “Nakakumi”, which is in the middle of squeezing.
In the middle drawing process, the tank is filled with bags of sake, and pressure is applied little by little from above.
It is said to be a good part of general sake because of its excellent balance of flavour.It is characterized by a pleasant melon scent and a well-balanced juicy sweetness.
