The Stonehorse Shiraz is made from fruit sourced from the estate vineyards planted in the late 1990s. The grapes are machine-harvested at night to preserve freshness. After destemming, the wine undergoes fermentation, followed by maturation in a combination of French oak barrels and the balance in a tank for 15 months. This process imparts structure and complexity to the wine.
