KI NO BI Kyoto Dry Gin – 季の美 is a premium Japanese craft gin produced by The Kyoto Distillery, Japan’s first dedicated artisanal gin distillery. “KI NO BI” translates as “The Beauty of the Seasons” (季の美), reflecting its distinctly Japanese approach to botanicals and seasonality.

Crafted using a rice spirit base, KI NO BI incorporates a carefully selected range of Japanese botanicals including yellow yuzu, hinoki cypress, bamboo, gyokuro tea and green sanshō pepper, alongside traditional juniper. The botanicals are distilled separately in flavour groups before being precisely blended together, allowing each element to retain its individual character while creating a remarkably balanced gin.

The nose is fresh and aromatic with yuzu and juniper, followed by subtle herbal and floral notes. The palate develops with citrus, gyokuro green tea, ginger and sanshō pepper, while the rice spirit contributes a smooth, clean texture. The finish is long and warming, with lingering citrus and Japanese spice.
