What is the difference between Pernod and pastis?

Both are French anise spirits. Pernod Anise is flavoured mainly with aniseed, while pastis such as Ricard also includes liquorice root and herbs.

Why does Pernod go cloudy with water?

The anise oils dissolve in alcohol but not in water, so adding water makes the drink turn milky. This is known as the louche.
