Billecart-Salmon Champagne Brut Rosé NV (France) 750ML

"The utter restraint of Billecart places delicate rosés very close to its heart... Antoine Billecart delights in recalling a tasting in which he poured the wine in black glasses for sommeliers. No one identified it as a rosé... A restrained and elegantly pretty rosé of pale salmon hue and very subtle strawberry hull and white cherry fruit. Delightfully understated and elegantly persistant, it carries its grace and poise amidst a taut profile of refined acidity and soft mineral presence. This cuvée is at its best in its youth" Tyson Stelzer, The Champagne Guide, 2017

"Orange pink. Wonderfully dry and complex Rose with a peacock’s tail of flavours that are most obvious on the finish. Beautifully balanced. A delicate and very appealing wine" Bob Campbell, Master of Wine, Jul 2006

"Bright, pale peach and eye-of-the-partridge pink colour with some depth, the bubbles moderately fine and persistent. The bouquet is full with softly packed and concentrated aromas of red florals, strawberries and red fruits, melded with complex bready-yeasty autolysis and a note of aldehyde detail. This has richness, volume and presence. Dry to taste and medium-bodied, the palate has poised succulence and richness of soft red berry fruits, quince and red florals, integrated with plenty of soft bready-yeasty autolytic complexity. The flavours are mouthfilling, but balanced by mouthwatering acidity and soft effervescence. The wine flows smoothly and gently to a long, nuanced finish. This is a harmoniously full and gently concentrated rosé Champagne with rich fruit flavours ad integrated autolytic complexity. It is drinking beautifully now. Serve as an aperitif, with antipasto and tapas, and dim sum over the next 2+ years. A blend of 40% Chardonnay and 30% each of Pinot Noir and Pinot Meunier, primary ferment in stainless-steel with MLF conversion, including 40% reserve wine, and Pinot Noir red wine added, resulting in 9 g/L dosage, the wine spending 24 months on lees" Raymond Chan, Jun 2018
