High West Bourbon is a bold yet approachable American bourbon from High West Distillery in Utah. It is crafted as a blend of straight bourbon whiskeys, aged for a minimum of two years in charred American white oak barrels. High West uses multiple mash bills, including higher-rye components, giving the whiskey more spice and complexity than a typically soft, sweet bourbon. It is bottled at a generous 46% ABV (92 Proof) and is neither chill-filtered nor carbon-treated.  

The nose opens with light caramel and sweet vanilla, followed by a rich, earthy palate of candy corn, honey nougat and sweet cornbread biscuits. The finish brings vanilla together with caramel apple and pecan pie, delivering a satisfying combination of sweetness, spice and warmth. It has enough complexity to enjoy neat while remaining an excellent choice for an Old Fashioned, Whiskey Sour or other bourbon cocktails.
