A refined Yarra Valley Chardonnay from the elevated Seven Slopes of Rising vineyard in Nillumbik, combining bright citrus fruit with fine texture and a distinctive mineral edge.
Grapefruit, white peach and lemongrass aromas mingle with almond and wet-stone notes. The palate is focused and long, revealing preserved lemon, delicate nutty complexity and bright, cleansing acidity.
Hand-picked fruit from two vineyard blocks is whole-bunch pressed into French oak barrels, 35% new, for indigenous fermentation. Twelve months on lees and a small amount of malolactic fermentation build texture while retaining freshness and precision.
Suggested food matches: Grilled scallops, roast chicken, lobster with butter sauce or creamy seafood pasta.
