Juyondai Nakadori Daiginjo showcases Banshu Yamadanishiki rice in a fragrant, finely textured sake. Takagi Shuzo polishes the rice to 35% of its original weight and brews it at low temperatures. The brewery selects the middle portion of the pressing, known as nakadori, for this bottling.
Serve chilled in a small wine glass to appreciate its aroma. Pair with white fish sashimi or steamed scallops, where delicate flavours let the sake shine.
