What Is Pisco?
Pisco is a grape brandy made in Peru and Chile from distilled fresh grape wine. Peruvian pisco is distilled once to proof with nothing added, not even water, and rested in neutral vessels, so it keeps the pure aroma of the grape. Chilean pisco may be distilled more than once and is sometimes aged in wood.
Peruvian Pisco Grape Varieties
Peruvian pisco is made from eight approved grapes. Quebranta gives a rounded, earthy style; Italia and Albilla are aromatic, floral and fruity; and Acholado is a blend of varieties that balances body and perfume. Try Demonio de los Andes in Acholado, Italia and Albilla to taste the difference.
Chilean Pisco
Chile's pisco comes from the Atacama and Coquimbo regions, mostly from Muscat grapes. Capel Doble Destilado and Alto del Carmen are classic Chilean names, ideal for a Piscola with cola or for a smooth Pisco Sour.
