About Chablis
Chablis is the northernmost wine region of Burgundy, France, and its white wines are made from 100% Chardonnay. A cool climate and Kimmeridgian limestone soils full of ancient oyster fossils give Chablis its signature crisp acidity, citrus and green apple fruit and flinty minerality. Most Chablis sees little or no new oak, so it tastes very different from richer, oaked Chardonnay.
Chablis has four levels: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. Premier Cru vineyards such as Montée de Tonnerre, Fourchaume, Vaillons and Montmains add depth and complexity, while the seven Grand Cru climats on a single south-west facing slope, including Les Clos, Les Preuses, Bougros and Valmur, produce the most powerful and age-worthy wines.
