What is Absinthe
Absinthe is a high strength spirit flavoured with wormwood, green anise, fennel and other herbs. It was first made in the Val de Travers in Switzerland in the late 1700s and became famous in Paris in the 1800s, where artists and writers called it la fee verte, the green fairy. Most absinthe is bottled at between 45% and 74% ABV.
Absinthe and Absinth
Absinthe with an e usually refers to the French and Swiss style, with a strong anise flavour. Absinth without the e is often used for the Czech or Bohemian style, which tends to have less anise and a more herbal, bitter character. Both are made with wormwood, the herb that gives absinthe its name.
How to Drink Absinthe
Absinthe is very strong and is meant to be diluted, not drunk neat. The traditional way is to pour a small measure into a glass, rest a sugar cube on a slotted absinthe spoon over the glass and slowly drip ice cold water over it, using three to five parts water to one part absinthe.
